Craving Smoked Mozzarella Fonduta

When we visit my grandmother, she often takes us to her favorite restaurant, Olive Garden. We always get their Smoked Mozzarella Fonduta. It’s really good! The other day I got a craving for it and headed for the kitchen. What I came up with isn’t exactly Fonduta, but it’s become one of our favorite cheap thrills. Here’s the recipe:
Spread some butter or olive oil on toast and sprinkle with salt, garlic, oregano, and basil. Now you have garlic bread! Layer with canned or fresh diced tomatoes. Sprinkle with Mozzarella. Spray with liquid hickory smoke. Bake at 450°F until warm, then switch to broiler to melt cheese on top.
Liquid Hickory Smoke can be found at our grocery store with the barbecue sauces. We put it in a small spray bottle with some water to help it through the nozzle. It has many uses in our kitchen and we especially recommend it for vegetarians.
