Chocolate Pudding from Scratch

The More With Less Cookbook by Doris Longacre (not an affiliate link) is an awesome resource for cooking from scratch. The recipes use less meat, sugar, and fat than traditional Mennonite cookbooks and incorporate more sustainable foods. This is a great cookbook for someone wanting to eat healthier and consume less of the world’s limited food resources. No one paid me to say this either. I just think it’s an awesome cookbook. I’m also very pleased with it at the moment for curing my chocolate craving!

If you also have a chocolate craving I would like to share this amazingly simple recipe (modified, of course!):

Heat on medium: 2 cups of milk, 2, 4, 3 Tbsp. cornstarch, 2 Tbsp. cocoa powder, and 1/3 cup of sugar or honey. A sprinkle of salt is optional. Stir constantly until thickened. Remove from heat and add as desired: 1 tsp. vanilla, 1 Tbsp. butter, or 1/4 cup of peanut butter. Cool and enjoy!

I can’t help thinking of it as Chocolate Gravy. This is basically a recipe for gravy… Okay, it’s a bit different. I’m just in awe that it was so easy. It’s also better than store bought in more ways than one.

    are you using sweetened or unsweetened cocoa? my guess is unsweetened as you are adding sugar and honey, but you never know with some dessert recipes.
