Hot Italian Sausage Soup

I’ve been really enjoying an array of soups lately to fight off the chill. Here’s another one from my grandmother’s Taste of Home: Casseroles, Slow Cooker,  and Soups cookbook.

Hot Italian Sausage Soup:

  • 1 pound bulk hot Italian sausage (I used hot sausage)
  • 1 can (14-1/2 ounces) Italian stewed tomatoes (plus can of water)
  • 1 can (8 ounces) tomato sauce (I used the regular size can)
  • 1 cup frozen Italian vegetables (used what I had on hand)
  • 3/4 cup julienned green, sweet red and/or yellow pepper
  • 1/4 cup chopped onion
  • 1/4 cup white wine or Progresso ® Chicken Broth (or one can of broth and 1/2 a cup of red wine added 5 minutes before serving)
  • 1 teaspoon brown sugar (or one spoon sweetener)
  • 1 teaspoon minced fresh parsley (dried was all I had)
  • 1/2 teaspoon Italian seasoning (I heavily spiced mine with Italian spices)
  • 1/8 teaspoon salt (or to taste)
  • 1/8 teaspoon pepper (or to taste, which included more red pepper for us)
