Oatmeal Raisin Cookies

I made cookies today! I used a recipe I’ve been playing around with and this was the best batch yet!

Cream together:
1 c. softened butter (salted)
1 c. packed light brown sugar (or substitute dark brown)
1/2 c. sugar
2 eggs
1 t. vanilla extract
Then add dry mixture of:
1 1/2 c. unbleached all purpose flour
1 t. baking soda
2 t. ground cinnamon
1/2 t. ground cloves
1/4 t. nutmeg
1/4 t. salt
Stir, then add:
3 c. rolled oats
1 1/2 c. raisins
Drop by spoonfuls onto cookie sheet. Bake 9-15 minutes at 350°F. Makes about 3 dozen.

If you prefer a healthier cookie, you can eliminate up to 1/2 a cup of sugar from the recipe, use whole wheat flour, and substitute applesauce for up to 1/2 a cup of butter. The applesauce substitution is a tip from the More with Less Cookbook (not an affiliate link). We never seem to have any around to try it, but I know it would be good!
